Even I cannot believe how much I snuck in there! I can frankly say “snuck” because you wouldn’t know they were there. The grated zucchini just “melt” inside the cake batter when baked and the result is pure rich moistness! These also make wonderful little cupcakes for a birthday party (I also have a vegan version of this recipe
here ). Kids have no idea they are eating their vegetables!!
Flourless Chocolate Cake It tastes as decadent as it looks! Your guests will never guess what the secret ingredient is in it! This dense chocolate cake is rich, dark and creamy (with an almost molten center!). Yet, it is low in sugar, has no added oil or butter (NONE!) and instead of flour, I use…. organic black beluga lentils! Not only are lentils a powerhouse nutrition staple, but black beluga lentils are the “champions”of all lentils with more protein and more fiber than all other types of lentils! In this recipe, I use
canned organic black lentils because it makes it so quick to make on the spot but I have also made it with
dry lentils that I cook from scratch and I give you that alternative as well.
The whole process entails throwing everything into a food processor! You have to taste it to believe it–My guests rave about it and I think (actually I know!) you will too!
Pizza RecipesSneaky Cheese Pizza It looks and tastes just like a plain cheese pizza–you know– the kind kids just love. But you and I don’t have to tell ’em there is nothing plain about this pizza! First of all, it sneaks soft wheat flour (it’s called
whole wheat pastry flour at your regular supermarket) in its perfectly chewy on the inside yet crisp on the outside crust. I intentionally don’t make it 100% soft wheat, but still enough to add fiber (I have a little plain bread flour in there too), just so that the kids are not on to me! Of course it has a nice yet simple
store-bought marinara sauce–the kind that doesn’t have added sugar. Of course it has cheese that melts and sizzles on top as it should. In fact I use full-fat cheese but a lot less of it than you otherwise would because some of it is replaced by……drum roll please……AVOCADO! You heard it-avocado!
You just do NOT know it’s there! Really–look at the photo–not a speck of green, just plain-old-looking pizza! You don’t see it because it is mashed up and mixed in with the marinara sauce and you just don’t taste it either because it’s so mild. But what you get out of it, besides its
impeccable nutrition and health benefits, is its richness-WOW!!!
Now, I know what you are thinking: Are you kidding me?? Make my own pizza dough? Trust me, I hear from people who tell me just that, all the time. All the time, that is…until they make this one and realize it is THAT easy! Try this one EXACTLY as I describe it — step by step — it is foolproof AND it takes 10 minutes to put together if you have one of those stand-up electric mixer. I make it so often, I just make it without thinking, and so will you!
The key is the starter “sponge” which activates the yeast before it is mixed in with the rest of the ingredients. After that, it’s just a cinch to make! Really, Really! Let that sink in and get started!

vegan, gluten-free melt-in-your-mouth cookies has all of 4 ingredients! That’s it! It’s so easy, it all goes in one bowl and you just need to stir with a spoon…et voilà! In fact, it’s so quick to make that it’s one of those recipes you go to when you just realized you were supposed to bring cookies to a party that you completely forgot about and you have literally 15 minutes until you have to be out the door! When you consider that they take exactly 8 minutes to bake and you need 2 or 3 minutes to cool off, it leaves you
about 4 minutes to prepare, which is all you need!! They are a savior and you will not believe the feedback you’ll get: it’s ALWAYS a favorite!

He, Dr. David Katz, has gone from the aspiring Preventive Medicine resident I met back then, to a world renowned expert in nutrition and disease prevention. So, when David presented me with the challenge of his very demanding nutrition standards, we realized that his passion for health and my love of French cooking also needed to be wed! And so our “marriage” of priorities resulted in 20 some years of methodical experimentation – but in our warm, lively home kitchen, rather than any neuroscience lab. Over those years, David and I have raised 5 beautiful healthy children together – Rebecca, Corinda, Valerie, Natalia and Gabe (I stopped working as a neuroscientist after Natalia was born) – and all of us have benefited from our shared passion for loving food that loves us back.
