The beauty of it is that, as long as these wholesome foods are a staple within your preferred diet–the theme–you are indeed the one to decide on the variation within that theme: if you prefer a healthy Mediterranean diet, or prefer a healthy vegetarian or vegan diet, or a healthy American style diet, or any particular cuisine of any particular culture, you can pick and choose!
There are so many choices within the theme of healthy eating, so much room for one’s personal preference, and that’s a beautiful thing!
Delicious and Nutritious Vegan RecipesSpinach Potato with Orange Caramelized OnionsFresh baby spinach, thinly sliced potatoes and caramelized onions bake slowly in an orange, white wine vinegar and olive oil marinade, and the result is just delicious and nutritious…and oh my goodness, if you are lucky enough to have some leftover, it is absolutely divine reheated in a pan or in the microwave–Perfect to take for lunch at the office!
Tuscan Bean Spinach PastaThis is a throw-everything-in-the-pot kind of dish that you make 15 minutes before you sit down to dinner! It is filled with spinach and whatever other greens you would like (I love baby arugula in particular) and the beans blend in perfectly with the white wine to create an almost creamy sauce (just take a look at the photo, amazing, right?!). I like to serve it over wholegrain pasta–Absolutely DELICIOUS!

Of course this is no typical risotto because this one will also love you back, so double comfort here!! The sweetness of the butternut squash blends beautifully with the brown rice and the simmering white wine (listen in the little clip below to that wonderful sizzling sound as I pour the wine ….ahhhhhh!). Then, a touch of gruyère cheese finishes it up to perfection!
10 Veggies Lasagna2 layers of wholegrain lasagna stuffed with a MOUND of veggies in a light béchamel sauce and topped with a simple marinara sauce and a sprinkle of Gruyère cheese (remember, a little goes a long way!). I have upgraded the béchamel sauce, Cuisinicity style, of course! It is free of saturated fats (I also give you a dairy-free soy milk option if you prefer–just as creamy delicious!) and I make it with wholegrain flour to boot
(here is the recipe for the béchamel). You can make this lasagna exactly as I have it in this recipe, or, pick and choose different vegetables.
Plus...Carrot Quinoa LentilsFarro White Bean RisottoPasta Fagiole with Spinach Mushroom Marinara SauceMediterranean CuisineMediterranean Couscous SaladThis is a wonderful Mediterranean whole wheat couscous salad filled with artichoke hearts, bell peppers, tomatoes, chickpeas, fresh basil, and topped with roasted sunflower seeds! It is perfect on a hot summer day, both because it is so refreshingly delicious but also because it requires no cooking at all! The couscous is raw and just absorbs all the wonderful flavors of the citrus dressing so that it is perfectly fluffy and not clumpy. This vegan salad makes for a complete dinner!
Mediterranean Barley StewThis is the vegetarian (or vegan, depending on the wine you use) version of my classic
Turkey Bean Pot-au-Feu! It has all those wonderful Provençal flavors of red wine, garlic, onion, tomato, carrots, cannelini beans and herbes de Provence (of course!), but I use barley instead! My goodness….yum… it fills my kitchen with those wonderful aromas when I make it, much to the delight of my family and guests!
Barley Salad with Pear Walnut & FetaThis is a classic Mediterannean light lunch that I love to serve over mixed greens. The combination of pear and walnuts with the naturally sweet nutty flavor of barley is superb! The little sprinkle of feta gives it a nice touch, but if you would like to keep it vegan, you can leave it out and it’s still delightful!
