Cuisinicity – Simple & Healthy Breakfast Recipes, Healthy Dinner Recipes, Healthy Lunch IdeasThe smell of a fresh pot of coffee, or hot cocoa and pancakes on the griddle on a sleepy Sunday morning, it just spells love. Here are a few of my favorites!…and, whichever one you choose, don’t forget to add a big bowl of fresh-sliced fruit to your breakfast table too!
Almond French ToastThe rich almond flavor in this French toast gives it just the perfect touch! I make it with
a wholegrain bread that is high in fiber, low in salt, low in sugar, and has no partially hydrogenated oils (even has lentils, and you know how I feel about those!). This recipe is just enough for 2 slices, and I mean it, the bread will soak it up to the last drop. I like to serve it with fresh strawberries but any other fresh sliced fruit will also do….so YUMMY!
Pumpkin Cinnamon Walnut PancakesAs delicious as they sound! what a YUMMY breakfast on a cold Sunday morning! These pancakes are made with organic white whole wheat flour which has all the nutritional advantages of traditional whole wheat, but with a lighter color and a milder taste. Here is
one I like to use and
another one that may be easier to find at your regular supermarket. This recipe is very similar to the one for my
Whole White Wheat Pancakes, but adds organic puréed pumpkin (100% pure–I like
this one), walnuts and a dash of cinnamon. These, topped with a drizzle of 100% maple syrup–WOW!

Healthy Recipes For Your Dinner Menu Halibut in Wine Tomato BrothSo simple and easy, so full of flavor and so beautiful on the dinner table! It’s a “throw”-everything-in-a-pan-and-just-bake-right-before-your-guests-arrive kind of dish! The white wine, fresh tomatoes, cilantro and turmeric all blend in perfectly with the halibut. The slices of lemon give it the final touch. The result is just delectable!
Turkey Bean Pot-au-FeuA pot-au-feu is one of those French family favorite feel-good comfort stews (typically made with beef) that simmers slowly in the oven or in a slow-cooker for a long time and fills the whole house with wonderful smells. I make mine with turkey (you can also make it with chicken, see my tip below) and lots of beans and it’s absolutely divine! I love to cook it in a slow-cooker and have it ready when I come home after a long busy day on a cold winter evening! This one has a Provençal flavor with garlic, red wine, tomatoes, cannellini beans and of course herbes de Provence. I like to serve it with my Simply Quinoa, Simply Sweet Potato and Simply Radicchio as side dishes but any grilled or oven roasted veggies will do too! What a satisfying complete meal on a blustery day!

Apple Prune ChickenGalette with Caramelized Onions, Tomatoes & Goat Cheese Tuscan Shrimp with Beans over Polenta Baked Tilapia ProvençalWhat's for Lunch?Fresh salads are perfect for lunch They are light and refreshing and you can make them so that they are a no-fuss complete meal in one bowl. All you need is a combination of some type of wholegrain, legume or bean, nuts or seeds and lots of veggies over mixed greens and you can dress up any table!
My Apple Hazelnut Kale Salad: The combination of the sweet & sour apple cider vinaigrette, fresh grated apple and chopped hazelnuts with the finely chopped kale is absolutely superb! I use this salad as a foundation: by that, I mean that I like to “build on it” and make it more of a centerpiece all-in-one meal so I can add some grains and legumes or beans to it for protein–French lentils or quinoa or farro blend beautifully–and of course more thinly sliced or grated veggies such as carrots, fennel, radishes… anything goes!
My
Quinoa Kale & Corn Salad with Fresh Mint is delightful. It is simple to make but it requires some assembling-still, it is so worth it and you can make it ahead of time! The combination of quinoa with a hint of turmeric, sautéed kale and grilled corn is wonderful together and the fresh mint gives it the perfect final touch!
There are so many other salads that I have created over the years that you can pick–some as main dishes, others as side dishes– but the choices are limitless! Here are a few:

So, have fun with it and…Bon appétit!
